Garlic with sprouts could be better for you


 

Don't throw out old garlic bulbs that have started to sprout green shoots — new research shows the older garlic has improved heart-healthy antioxidants.

Garlic has long been touted as a natural way to reduce cholesterol levels, blood pressure and the risk of heart disease, but Korean researchers found the antioxidant activity was highest when it was allowed to sprout for five days.

Extracts from older garlic protected cells in a laboratory dish from certain types of damage, the researchers found.

"Sprouting changed the metabolite profile of garlic," the researchers say in the study, which appears in the Journal of Agricultural and Food Chemistry.

They say allowing garlic to sprout "may be a useful way to improve the antioxidant potential of garlic."
